Oatmeal with almond butter & frozen berries

I believe in a balanced, plant based diet. Eat delicious, healthy, whole foods that leave you feeling satisfied and happy all day.

Perfect oatmeal... A lot of people nowadays accuse all carbohydrates of being evil. I definitely believe that refined carbohydrates can cause a lot of damage to the body but for me health is about a broader perspective as well. Some people find something that they like to eat and they believe it's healthy. Then they eat that thing for breakfast every single day for the rest of their lives. I think that's actually the opposite of eating healthy. A healthy diet for me is about eating lots of different things. The only thing I ever recommend someone to do each and every day is drink green juice (with only veggies, no fruit). I am 100% convinced that that's the only thing that is definitely good for us. Haha, or have you ever heard someone with scientific facts claim the opposite? Naah, didn't think so...

Carbohydrates don't have to be evil. What does make them bad is that the majority of grains and grain-related products that we consume are highly processed, refined, and stripped of nearly all their nutrients. The reason for this is prolonged shelf life. Of course we also tend to like food that is sweeter, easier to chew and faster to cook. So it’s pretty difficult to convince people to spend more money on food that spoils faster, takes longer to cook and longer to eat! Haha, obviously!

But, what I believe in is that whole grains and carbohydrates can be great for you as long as you eat a varied and balanced diet. Eat different kinds of breakfast, put different things in your smoothies every day, different things in your salads. And that's actually something that came naturally when I went from a standard diet to a plant based diet. There are so many new things to try out. Don't limit yourself to the things you already know and like, try something new. Every day!

Morning oatmeal with almond butter & frozen berries recipe

Makes 2 generous servings. Time: 15 minutes.

Oatmeal

  • 1 cup rolled oats
  • 2 cups water
  • 1/4 cup desiccated coconut
  • 2 tbsp sunflower seeds
  • 1/2 tsp cinnamon
  • pinch of salt

Toppings

  • 1 banana
  • 1/2 cup blueberries
  • 2 tbsp almond butter
  • 1 cup plant milk
  • 1-2 tbsp agave syrup (optional)
  1. Bring your water to a boil and then add your oats. (this gives you a more textured, toothsome oatmeal)
  2. Turn down the heat slightly and stir gently. Add the rest of the ingredients.
  3. Continue string for 3-5 minutes. Remove the oatmeal from the heat and let it rest for a minute or two.
  4. Serve the oatmeal in a bowl topped with banana, almond butter, berries and some plant milk. Enjoy!

Havregrynsgröt

  • 2 dl havre
  • 4 dl vatten
  • 1/2 dl kokos
  • 2 msk solrosfrön
  • 1/2 tsk kanel
  • pinch of salt

Toppings

  • 1 banan
  • 1 dl blåbär
  • 2 msk mandelsmör
  • 2 dl havremjölk eller annan plantmjölk
  • 1-2 msk agavesirap (valfritt)
  1. Låt vattnet koka upp och lägg sen i havren. (Det här ger dig en gröt med mer tuggmotstånd)
  2. Sänk värmen något och rör om försiktigt. Tillsättresten av ingredienserna.
  3. Rör om i 3-5 min. Avlägsna gröten från värmen och låt den vila i nån minut.
  4. Servera gröten i en skål toppad med banan, mandel smör, bär och växt mjölk.

I've noticed that people like their oatmeal different, some like it creamy, some like it a bit more firm... I'm a fan of the latter. I'm not saying I want it to be super hard and gluey, but I want it pretty firm. I also add sunflower seeds and coconut to create a more chewy texture. If you know that you're one of those people who like it soft and creamy then you'll just have to add about 1/2 a cup more water. I know that some people cook their oatmeal in milk to make it creamier but I prefer to just add a splash of oat milk or almond milk in the bowl instead...
